1. First of all, you have to peel and wash the potatoes. Then, cut them into thin slices, not very large pieces, and then sprinkle with salt. Do the same with the onion, but cutting them into smaller pieces.
 
2. In a big pan, heat the sufficient oil. When oil is hot, add potatoes and onions. We recommend you to fry the first minutes in a high heat, and then lower the flame.
 
3. It is best to stir potatoes using a skimming spoon to avoid sticking or burning. The potatoes will be ready in about 10-15 minutes.
 
4. Once the potatoes and onions have been fried, take them out of the pan draining the oil and put them in a large bowl. Beat the eggs into a dish, put them over the potatoes and mix everything together.
 
5. Now let’s make the tortilla. Heat the oil in a large frying pan, and add the mixture of potatoes and eggs. Let the egg sets on medium-intense heat and then lower the flame.
 
6. Once the omelette is cooked on one side, turn to the other side using a flat plate. Let the other side until cooked. Then your omelette is ready to eat.
